Adam's Ribs - Redefining Vegas Local Restaurants

For years, big-name chefs have brought their best restaurants to Las Vegas, turning The Strip into an international food Mecca. Now, Las Vegas returns the favor with local flavor to ensure everyone is happy and behind that push is Adam Carmer.

A long-standing local, Carmer’s success has shown he really knows what Las Vegans love. Premiering Adam’s Ribs in May 2008 on Maryland Parkway, it has quickly become the most-talked-about new barbeque place in the Vegas Valley.

With mouth-watering food at affordable prices, there truly is no place like Adam’s Ribs. Featuring every food item for any craving, Adam’s Ribs takes care of every diner by offering salads, appetizers, sliders, sandwiches, pizzas, entrees, sides, and of course, delicious ribs!

To begin, guests have a choice of rib tips, baby back ribs, beef ribs, and spare ribs with two special sauces and a special rub (which has almost zero salt and an amazing taste). The ribs not only look different (the beef ribs look like dinosaur bones!), but they taste different as well. Each is cooked to such perfection the tender meat slides right off the bone to create a rib experience every diner wishes for without all the grease.

On the side, diners must try the sweet potato fries (drizzled in honey) and the grilled corn on the cob (coated with home-made mayonnaise and parmesan cheese). Each fry is crispy, yet seems oil-free while the corn is so fresh, you would think it was grown and picked right there in the restaurant! Another favorite is the spicy Guinness chili. (Even if you aren’t big on chili, you’ll be big on this.)

Last, but most certainly not least, is the Coho salmon. The cast-iron seared 8 ounce fillet with the special rub is another item so fresh, it’s hard to believe Adam didn’t catch the fish himself. In fact, every item is not only fresh, but it hardly contains any grease, which assures diners they truly have the best of both worlds.

More recently, Las Vegas Mayor Oscar Goodman cut the red ribbon christening Tequila U, a part of the bar featuring the largest variety of tequilas in town. Tequila U is home to the Barbeque Margarita™, a signature marriage of savory barbeque flavor and terrific tequila, and starting in September, Tequila U will be an education on tequila, where guests can earn a certificate once completed. Also, don’t forget to ask about the scorpion shot! Anyone who finishes the tequila shot with the scorpion inside gets their picture added to the “Scorpion Wall.”

Along with teaching wine, beer and spirits classes to countless UNLV students, Carmer is a sommelier, esteemed beer judge and spirits expert, who has run top restaurants on The Strip all through the gourmet boom. Already, his second Adam’s Ribs has come to life in the Grand Canyon Center (near Flamingo and 215) and a third opens soon at Arroyo Center (near Rainbow and 215).

Adam’s Ribs on Maryland is located at 4770 South Maryland Parkway (across from UNLV) and is next to Carmer’s Freakin’ Frog, which delivers an unmatched selection of beers and entertainment.
